We eat tacos a lot around here. They taste so good, and they are so easy to put together! (Even easier when you make a bunch of taco meat ahead of time in your slow cooker and freeze it for a fast meal later!) But sometimes I get bored with the “same old” tacos, so I’m looking for ways to change it up a bit!
This recipe is adapted from one in “Autumn in a Jiffy” by Gooseberry Patch.
Instead of the classic taco seasoning, this recipe used Hidden Valley Original ranch dressing mix and barbecue sauce. Um… yum?
I also switched out ground beef and used ground turkey instead, just for a change of pace. Brown the turkey in a large saucepan. Then add the ranch dressing mix and toss it around to mix well. Then add the barbecue sauce, mix, and cook for a few minutes until the sauce gets nice and thick.
Once your taco meat is ready to go, fill your taco shells (I used 7 shells) and place them in a baking dish (my 9×9 pan worked perfectly) and top the meat with plenty of shredded Cheddar cheese. The Old El Paso Stand N Stuff taco shells work great for this – you can just stand them up and leave them alone, instead of fighting with the round bottomed shells. Bake the tacos for 10 minutes for super-melty cheese and super-crispy shells.
Top it off with fresh tomato and avocado, and it feels like summer in here!
