This recipe is re-vamped slightly from one I did way back a long time ago early in my blogging days. To be honest, the recipe is practically identical. But the photos are much better this time around! (Seriously, be glad you guys didn’t know me when…)
I found this recipe a while back in Hometown Harvest from Gooseberry Patch. I still love everything in this cookbook!
But at dinner time, it doesn’t matter how good the photos are, it matters how good the recipe is. And this one is a winner!
I love using chicken thighs in my slow cooker recipes. They are much more forgiving than chicken breasts, they don’t overcook as quickly, and they don’t dry out as easily. You can substitute chicken thighs any time the recipe calls for chicken breasts (just know that the nutritional information is a tiny bit different).
I sliced my peppers and onions into slices instead of cubes or chunks (see how to easily slice an onion without crying here), but you can chop those veggies up any way you want! This is just such a happy combination of flavors. It’s bright and sunny, perfect for a hot summer day; and it’s warm and comforting, perfect for a cold winter night!

Slow Cooker Hawaiian Chicken
Ingredients
- 3 Tablespoons cornstarch
- 1 cup chicken broth
- 20- ounce can pineapple tidbits
- 1 bell pepper sliced
- 1 onion sliced
- 1 cup brown sugar
- 1- ounce package Italian dressing mix
- 1 Tablespoon soy sauce
- 3 pounds boneless skinless chicken thighs
- cooked rice
Instructions
- In a small bowl, combine cornstarch and chicken broth. Mix well with a small whisk or a fork and set aside.
- Add the rest of the ingredients except the rice and chicken to a 6-quart slow cooker and stir gently to mix.
- Add the chicken to the slow cooker, and gently press down into the vegetable mixture.
- Pour the chicken broth mixture over the chicken.
- Cover and cook on high for 4-5 hours, until the chicken reaches 165 degrees F measured with a meat thermometer.
- Serve immediately.
