Slow Cooker Hawaiian Chicken

  • 3 Tablespoons cornstarch
  • 1 cup chicken broth
  • 20- ounce can pineapple tidbits
  • 1 bell pepper sliced
  • 1 onion sliced
  • 1 cup brown sugar
  • 1- ounce package Italian dressing mix
  • 1 Tablespoon soy sauce
  • 3 pounds boneless skinless chicken thighs
  • cooked rice


  • In a small bowl, combine cornstarch and chicken broth. Mix well with a small whisk or a fork and set aside.
  • Add the rest of the ingredients except the rice and chicken to a 6-quart slow cooker and stir gently to mix.
  • Add the chicken to the slow cooker, and gently press down into the vegetable mixture.
  • Pour the chicken broth mixture over the chicken.
  • Cover and cook on high for 4-5 hours, until the chicken reaches 165 degrees F measured with a meat thermometer.
  • Serve immediately.
