Is there anything more fun than grabbing a handful of those cute little mini pepperonis for a snack? What about mixing them with lots of cheese and pasta for some simple pizza-themed pasta?

We eat a lot of pizza. I mean, a lot of pizza. But it can get expensive. And we tend to order the same thing from the same place every single time, which can get kind of boring. So I’m always looking for ways to make pizza night more interesting (and less expensive!).

These mini pepperonis from Hormel are one of my son’s favorite snacks. I can pretty much guarantee that he’ll eat any recipe I make with them! In this one, I know he is going to pick out all the green bell peppers, but I’ll take that over him just not eating anything!

Mix and match your favorite veggie toppings in this dish. If green peppers aren’t a favorite in your house, use something different! Black olives are a winning pizza topping here, so that’s probably what I should have used instead of the peppers. But I just loved the colors so much more with the green instead of the black! (And I like green peppers but not black olives… when momma’s cooking, she gets to make what she likes!)

This dish is best warm, right out of the skillet. But if you like cold leftover pizza, you’ll also love this as cold leftovers right out of the refrigerator! Eat this Quick & Easy Pepperoni Pizza Pasta as your main dish with a side of garlic bread, or use this as your side next to a simple grilled steak. Or for a seriously pepperoni-themed dinner, make these delicious Pepperoni Pizza Grilled Cheese Sandwiches, too!

Ingredients
  

  • 2 cups cooked orzo pasta
  • 1 cup mini pepperonis
  • 1 green bell pepper chopped
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Combine all ingredients in a large saucepan.
  • Cook over medium heat, stirring frequently, until the cheese is melted and the dish is heated through.
  • Serve immediately as a main course or as a side dish.
