How to Make Pepperoni Pizza Cups

We love pizza (who doesn’t?), but there is only one pizza place that will deliver to us! They are crazy-busy, and their wait times for delivery are crazy-long. I could go pick the pizza up… but who wants to change out of sweatpants to go out in public? So I’m always looking for new ways to make pizza at home. These simple Pepperoni Pizza Cups are a huge hit!

I started with our popular Kid-Friendly Cheeseburger Cups recipe. They are basically like sloppy joes all wrapped up in a biscuit – how can you go wrong with that? Check out the original recipe here, with a short step-by-step video.

The basic ingredients are the same – ground beef, cheese, and refrigerated biscuits. But to make them a little more pizza-y (can that be a word now?), I added pizza sauce, some Italian seasoning, and mini pepperoni. See the printable recipe card below for the amounts and detailed instructions.

Pop these little guys in the oven for about 20 minutes, and it’s ready a long time before our pizza delivery guy could get here!

How Many Pepperoni Pizza Cups Does This Recipe Make?

A can of refrigerated biscuits comes with 8 biscuits. You’ll have more than enough of the meat mixture to make 8 Pepperoni Pizza Cups. You’ll have enough pizza “filling” to make about 12 pizza cups. What to do with those other biscuits? Bake them up and top them with butter and garlic for some quick and easy homemade garlic bread!

Can I Use Other Pizza Toppings?

We are big fans of pepperoni, especially these mini pepperonis. You can easily switch this recipe up with your favorite pizza toppings. Mix some chopped vegetables in with the ground beef and pepperoni, take out the pepperoni, use sausage instead of ground beef. You could also serve these Pepperoni Pizza Cups with small bowls of toppings – your family can customize their cups with whatever toppings they like. Go crazy, and have fun!

Ingredients
  

  • 1 pound ground beef
  • 5- ounce package mini pepperoni
  • 14- ounce jar pizza sauce
  • 1 Tablespoon Italian seasoning
  • 1-1/2 cups shredded mozzarella cheese
  • 2 16.3- ounce cans refrigerated biscuits

Instructions
 

  • Brown ground beef in a large skillet.
  • When beef is cooked, stir in pepperoni and Italian seasoning.
  • Add pizza sauce to the beef mixture and stir well. Continue to cook over medium-low heat until heated through.
  • While the beef is cooking, open the biscuits. One at a time, press a biscuit flat between your palms. Then press the biscuit into a greased muffin tin to make a "cup."
  • Spoon the beef mixture into each biscuit cup. (You'll have enough meat to fill about 12 biscuits cups.)
  • Top each biscuit cup with shredded mozzarella cheese.
  • Bake at 350 degrees for 20-25 minutes until the biscuits are done and the cheese is melted.
  • Serve immediately.
