For the last few years, we haven’t had much luck growing cucumbers in our garden. This year, for whatever reason, our cucumber plants are going crazy! We have more cucumbers than we know what to do with, so I’m playing with different recipes.

I love the combination of cucumbers and dill, so this was a fun salad to make. I added a little green onion to really punch up the flavor!

Even though our pre-schooler wasn’t crazy about eating this salad, he did love helping with the pictures! Mommy, take a picture with my hands in it!

He took a bunch of his own pictures, too, but he hasn’t quite figured out my big digital camera. They were all pretty blurry. We’ll have to do some more practicing! He might not like to eat all the recipes here on My Fearless Kitchen, but he does love to help cook and pose for photos!

Ingredients
  

  • 1 large cucumber
  • 2 green onions
  • 2 sprigs fresh dill chopped (approximately 1/4 cup) (use this chart to use dried dill instead)
  • 1/3 cup light mayonnaise

Instructions
 

  • Peel cucumber if desired. Slice cucumber in half lengthwise, then slice the cucumber into bite-size pieces.
  • Roughly chop the green onion.
  • Combine all ingredients in a medium-size bowl. Stir well to combine.
  • Cover and refrigerate for 1-2 hours. Serve chilled.
