I love a good soup. And I love a good potato soup even more! When I found this recipe for Mashed Potato & Ham Soup in “Mom Knows Best” by Gooseberry Patch, I knew I had to try it!
I like potato soup to be thick. Even though this soup is broth-based, it gets thickened up at the end with the addition of instant mashed potato flakes. Add as much (or as little) as you want to get your potato soup to just the right consistency!
Did I mention, this soup is a great way to use up some leftover ham from Christmas or Easter? Because, really, who eats all their ham at the first meal? There is always some left! Toss a couple of cups of cubed ham in this soup, and you’ve made a serious dent in your leftovers!

Mashed Potato and Ham Soup
Ingredients
- 8 cups chicken broth
- 6-8 potatoes peeled and cut into 1/2 inch cubes
- 2-3 carrots peeled and chopped
- 1/2 cup onion diced
- 2 stalks celery chopped
- 1 pound 2-3 cups cooked ham, chopped
- 1-1/2 teaspoon garlic salt
- 1-1/2 teaspoon salt
- 1-1/2 teaspoon pepper
- 1-2 cups instant mashed potato flakes one 4-ounce package of instant mashed potatoes is approximately 1 cup
- 1/2 cup butter sliced
- 1/2 cup grated Parmesan cheese
- Optional: fresh chopped parsley or chives to garnish
Instructions
- In a large stock pot, over medium-high heat, combine broth, vegetables, ham, and seasonings.
- Bring to a boil.
- Reduce heat to medium and simmer until potatoes are tender (about 15-20 minutes), stirring occasionally.
- Shortly before serving, stir in remaining ingredients.
- Simmer for 10 minutes, until thickened.
- Soup will continue to thicken as it is cooked longer, and as it cools.
- Top individual portions with desired garnish.

Made this recipe for dinner last night,the only thing was too much salt,I should have realized that 1.5 tsp. of salt and 1.5 tsp. of garlic salt was way too much,my husband and I could not eat it sorry to say.Maybe next time I will use better judgement and measure to my taste
