Mashed Potato and Ham Soup

This recipe for Mashed Potato & Ham Soup is a great option for your classic potato soup comfort food. Mix in some mashed potatoes for a thick, creamy soup!

Ingredients
  

  • 8 cups chicken broth
  • 6-8 potatoes peeled and cut into 1/2 inch cubes
  • 2-3 carrots peeled and chopped
  • 1/2 cup onion diced
  • 2 stalks celery chopped
  • 1 pound 2-3 cups cooked ham, chopped
  • 1-1/2 teaspoon garlic salt
  • 1-1/2 teaspoon salt
  • 1-1/2 teaspoon pepper
  • 1-2 cups instant mashed potato flakes one 4-ounce package of instant mashed potatoes is approximately 1 cup
  • 1/2 cup butter sliced
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh chopped parsley or chives to garnish

Instructions
 

  • In a large stock pot, over medium-high heat, combine broth, vegetables, ham, and seasonings.
  • Bring to a boil.
  • Reduce heat to medium and simmer until potatoes are tender (about 15-20 minutes), stirring occasionally.
  • Shortly before serving, stir in remaining ingredients.
  • Simmer for 10 minutes, until thickened.
  • Soup will continue to thicken as it is cooked longer, and as it cools.
  • Top individual portions with desired garnish.
