You’ll love this one-pot meal that’s packed with veggies, protein, and even a carb. It’s got something for everyone! And you can easily freeze the leftovers to keep for another busy weeknight.
Every year we butcher a pig, so we always have a plentiful supply of ground pork. (But somehow, we always run out of bacon!) While John could make sausage gravy and biscuits every day, there’s only so much of that I can take. So when I found this recipe in Gooseberry Patch’s “Our Favorite Freezer-Friendly Recipes”, I knew I had to try it with some of our ground pork!
Now this recipe is one of our staples! It’s simple to make, and you can customize it any way you want! Love broccoli? Add even more. Use a mixture of broccoli and cauliflower. Add some sugar snap peas. Pile in some more onion, or even add mushrooms if your family likes those! The sky is the limit, so use your imagination!
This recipe does make a huge amount of food. So you need to cook it in a big pot. I used my Calphalon Dutch oven. You’ll want something that will hold at least 7 quarts. Big recipe? No problem! Save the leftovers for tomorrow night, or freeze the extra for another time.
To freeze, just package your leftovers in Ziploc freezer bags, label, and freeze. (And don’t forget to add it to your freezer inventory!) You can freeze your leftovers in family-size packages, or in single-serve packages. That would be perfect to take to work for lunch!
Then when you’re ready to eat, just thaw, heat, and eat!

Freezer-Friendly Sausage, Broccoli, and Rice
Ingredients
- 2 pounds ground pork or sausage
- 2-12 ounce packages frozen broccoli thawed
- 2 cups carrot peeled and sliced
- 1 onion chopped
- 3 Tablespoons lemon juice
- 2 Tablespoons butter
- 1 Tablespoon all-purpose flour
- 1 Tablespoon dried parsley
- 1/2 teaspoon salt
- 1 teaspoon dried minced garlic
- 2 cups white rice uncooked
- 4 cups chicken broth
Instructions
- Brown ground pork in a Dutch oven over medium heat.
- When the meat is fully cooked, add the rest of the ingredients except the chicken broth.
- Cook for 2-3 minutes, stirring frequently.
- Add the chicken broth and stir well.
- Cover and bring to a boil.
- Reduce heat to a simmer and cook for 20 minutes, until the rice is cooked.
