I can’t even begin to tell you how much I love grilling season! I love cooking on my grill… in fact, I’ve even been known to cook French toast for breakfast out on the grill! It’s so easy to throw a steak or a couple of burgers on the grill. But then I hate having to head into the kitchen to throw together a side dish or two. So I was thrilled to find plenty of recipes for side dishes in Gooseberry Patch’s cookbook, “Grilling and Campfire Cooking”. Anytime I can cook the entire meal (or just about all of it) on the grill, I’m in heaven!

The recipe calls for grated Parmesan cheese. I had some Kraft grated Parmesan cheese handy, so that’s what I used. But freshly grated Parmesan would be great… and I’m definitely planning on trying this with a sprinkling of shredded mozzarella cheese!

This will be a great recipe to use all summer long, with garden-fresh tomatoes. Yum! When they come off the grill, top them with an extra sprinkle of balsamic vinaigrette dressing and some fresh basil.

I used my Wilton Armetale Gourmet Grillware Warming Tray to grill the tomatoes. This tray is a great way to cook more delicate foods or smaller pieces (think shrimp without the skewers, or zucchini strips) and still get that great grilled flavor.

Ingredients
  

  • 4 to matoes halved
  • 1/4 cup balsamic vinaigrette salad dressing
  • 1/4 cup grated Parmesan cheese
  • Dried basil to taste

Instructions
 

  • Place tomatoes on a grill-safe baking pan, cut-side up.
  • Drizzle tomatoes with salad dressing and sprinkle with cheese and basil.
  • Place the baking pan on the grill over medium heat.
  • Cook for 15 minutes, or until the tomatoes are soft and the cheese is golden.
