I love burgers on the grill, but just a plain old hamburger patty (or a cheeseburger) can get a bit boring. Gooseberry Patch’s “Grilling and Campfire Cooking” has plenty of hamburger recipes to keep you grilling all summer long! John loves a fried egg on his hamburgers, but we never think to do that when we’re cooking at home. So when I found this recipe for Eggscellent Burgers, I knew we would be cooking these!
These hamburgers also have a fantastic sauteed onion and pepper topping. If your grill has a side burner, that’s a great way to cook your veggies and your eggs while your burgers are grilling!
PRO TIP – cut your onions and peppers into long strips. Long strips will stay put on top of your burger. If you chop the veggies into chunks, they’ll keep falling off. Trust me. Also, go with an over-medium egg. The yolk will be just runny enough that it makes a beautiful mess on the bun, but not all over your fingers. It’s a wonderful creamy addition to the melty cheese. Yum!
Top it all off with fresh tomato slices and some melted Cheddar cheese, and I’m in hamburger heaven!

Eggscellent Burgers
Ingredients
- 1 pound ground beef
- 2 cloves garlic minced
- salt and pepper to taste
- 1 Tablespoon olive oil
- 1/2 onion sliced
- 1 green pepper sliced
- 1 Tablespoon butter
- 4 eggs
- 4 hamburger buns split
- 4 slices Cheddar cheese
Instructions
- Mix together beef, garlic, salt, and pepper in a large bowl. Using a burger press, form into 4 patties.
- Grill burger patties to desired doneness; keep warm.
- While burgers are cooking, heat olive oil in a large skillet over medium heat. Saute onion and green pepper in olive oil until tender (about 5 minutes). Remove vegetables to a bowl and keep warm.
- Melt butter in a skillet. Break eggs into the skillet and cook to desired doneness (over medium or over hard works best with these burgers).
- Top each bun with a burger, a cheese slice, a fried egg, and a spoonful of the vegetable mixture.
- Serve immediately
