We eat a lot of bacon and tomato sandwiches in the summer. When you cook up bacon a pound at a time and have way too many tomato plants in the garden, it’s a fast and easy lunch! But I got to thinking… what would make a bacon and tomato sandwich even better? Cheese!
Grilled, melty cheese to be exact. Yummm….
I used Sara Lee Artisano style bread for this sandwich. I am loving this bread for grilled cheese sandwiches! It’s thick-cut, so you can stuff a lot of ingredients in the sandwich and not end up with thin, soggy bread holding it together. Because it is so thick, you do need to cook these sandwiches over low heat for a little longer time. Otherwise, the bread will get burnt before the cheese gets melted. And that’s no good.
I also topped it off with a sprinkle of Italian seasoning. Fast, easy, delicious, and comforting! Here’s to a quick lunch on the go!

Bacon & Tomato Grilled Cheese
Ingredients
- 4 slices bread
- 4 teaspoons butter
- 6 slices Mozzarella cheese
- 1 to mato sliced thin
- 4 pieces bacon cooked crisp
- 1 teaspoon Italian seasoning
Instructions
- Spread butter on one side of each piece of bread.
- Preheat a skillet over medium-low heat.
- Place one piece of bread, buttered side down, in the skillet. Turn the heat down to low.
- Assemble sandwich in the skillet as follows - 2 pieces of cheese, 2 pieces of bacon, 2-3 slices tomato, a sprinkle of Italian seasoning, 1 piece of cheese, 1 piece of bread (buttered side up).
- Cook sandwich on low for 3-4 minutes, until the bread is browned and the cheese begins to melt.
- Using a spatula, flip the sandwich over and cook for 3-4 minutes on the second side.
- Remove sandwich from skillet and repeat for the second sandwich.
