One of my favorite things about Thanksgiving is having the leftover turkey to make soup with. This soup simmers away all day long in your slow cooker, leaving your house smelling like Thanksgiving for at least one more day!

After John carved our turkey, I used the rest of it to make homemade turkey broth. I made turkey broth in my slow cooker overnight, so it practically made itself!

So… On Day 1 I roasted the turkey. Overnight I made the broth. And on Day 2 I made this soup.

Toss all the ingredients (except the noodles) into your slow cooker. Ignore it for the rest of the day. I swear.

When you’re almost ready to eat, toss in some noodles. I used 2 cups of these adorable turkey shaped noodles from Pastabilities. I also like to use wide egg noodles. Let the noodles cook for 20-30 minutes, and you’re ready to go! If you use fancy noodles (like the turkey shaped noodles I used), they get fragile if they cook too long. They’ll break into little pieces if they get overcooked.

Too much broth for just one batch of soup? Too much soup? Let it cool, spoon it into freezer bags, and freeze it. Thaw it out later in the winter for a mid-January Thanksgiving treat!

**PRO TIP:  When freezing liquids like broth or soup, freeze it in Ziploc freezer bags. Lay the bags flat on a baking sheet in the freezer. Once they are frozen solid, you can stack them or stand them up on end and they’ll take up much less space. You can also freeze broth in ice cube trays!

Ingredients
  

  • 2-3 cups cooked chopped turkey
  • 3 stalks celery coarsely chopped
  • 2 carrots coarsely chopped
  • 2 large potatoes peeled and coarsely chopped
  • 1 onion coarsely chopped
  • 5 cups turkey broth or chicken broth
  • 2 cups turkey-shaped noodles or 12 ounce bag wide egg noodles

Instructions
 

  • Combine all ingredients, except noodles, in a 6 quart slow cooker.
  • Cover and cook on low for 8-10 hours.
  • In the last 20 minutes of cooking, stir in uncooked noodles.When noodles are tender, serve.
