This breakfast casserole is so easy to make. You can put it together quickly while you’re putting away the leftovers from dinner. Stash it in the refrigerator overnight, and you’re ready to pop it into the oven first thing in the morning! Just save 1 pound of your turkey leftovers. Mix that with some bread, eggs, milk, and cheese, and you’re ready to go!
If you really want to cheat, don’t use one of your regular 9 x 13 pans. Grab a disposable pan, and then you won’t have any clean up the next morning!
While this version of the recipe calls for cooked, cubed turkey, you can substitute any other meat. Try with browned turkey sausage, pork sausage, or ground beef. Or cook a pound of bacon, crumble it, and mix that in instead. Can’t decide on your favorite breakfast meat? Use them all! Mix in some bacon with your turkey for a really fun morning-after-Thanksgiving breakfast.

Turkey Breakfast Casserole
Ingredients
- 6 slices bread cubed
- 1 pound cooked turkey cubed
- 8 eggs
- 2-1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded Cheddar cheese
Instructions
- Lightly grease a 9x13 inch baking pan. Spread bread cubes and turkey evenly in bottom of pan.
- In a large bowl, beat together eggs, milk, salt, and pepper. Pour over bread and turkey mixture. Sprinkle cheese on top.
- Cover and refrigerate overnight.
- In the morning, let stand at room temperature for 30 minutes. Bake, uncovered, at 350 degrees for 35-40 minutes until golden brown.
