Oatmeal is one of my favorite breakfasts. I like steel-cut oatmeal the best, there’s something about the texture that I just love! But steel-cut oats take so long to cook, they aren’t very convenient for busy mornings – which are the days when I need a powerful oatmeal breakfast the most! Enter the Instant Pot, and steel-cut oats are done in minutes!

Oatmeal by itself is pretty darn good. And when you add in something really yummy like sugared strawberries, well, it just keeps getting better!

I make a lot of “overnight oatmeal” with steel-cut oats in my slow cooker. And I love using my slow cooker for that! But let’s be honest… I don’t always remember to set up breakfast when I’m getting ready for bed. And steel-cut oats in a Crock-Pot take 6-8 hours… Not exactly something you can do for a quick breakfast.

But steel-cut oats in the Instant Pot? Oh, baby! They are so easy, fast, and delicious! They only cook for 5 minutes at pressure, and the whole time your Instant Pot is coming up to pressure and releasing pressure you can just ignore it! (That’s my favorite thing about the Instant Pot, by the way, hands-off cooking!) So you can set up this recipe for Instant Pot Strawberry Oatmeal, wander off and finish getting ready for the day, and come back to perfectly cooked oatmeal! It really doesn’t get much better than that!

Tips for Cooking Instant Pot Strawberry Oatmeal

  • Use the saute feature on your Instant Pot to melt the butter and warm up the Instant Pot. This will help it come up to pressure a little faster.
  • Only use regular steel-cut oats in this recipe. Do not use quick-cooking steel-cut oats! Instant oatmeal, quick-cooking oatmeal, or even old-fashioned oatmeal will turn to a nasty mush in your Instant Pot.
  • Prep the strawberries the night before, or as soon as you turn your Instant Pot on. The longer the strawberries sit in the sugar, the better they will taste!
  • To reheat oatmeal (in case you have any leftovers), put oatmeal in a microwave-safe bowl. Add a little water, and microwave on high for 1 minute. Stir, and repeat as necessary until the oatmeal is warmed through.

Instant Pot Strawberry Oatmeal

Ingredients
  

  • 1 cup steel-cut oats
  • 1/4 teaspoon salt
  • 2 Tablespoons butter
  • 2 teaspoons pure vanilla extract
  • 3 cups water
  • 1-1/2 cups chopped strawberries
  • 1/4 cup sugar

Instructions
 

  • Turn Instant Pot on to saute setting
  • Add butter, oats, salt, vanilla to the Instant Pot.
  • Stir frequently until butter is melted.
  • Add water to the oats mixture.
  • Cover and seal the Instant Pot, setting the vent pipe to "sealing."
  • Press "manual." Cook on high pressure for 5 minutes.
  • While the oatmeal is cooking, combine the strawberries and the sugar in a small bowl. Mix well and set aside until oatmeal is done.
  • After a 10-minute natural pressure release, turn the vent pipe to "venting" and let the rest of the pressure release.
  • If you want your oats softer, put the cover back on and let sit (on the keep warm setting) for an additional 5-10 minutes.
  • Stir strawberries into oatmeal.
  • Serve immediately.
  • Refrigerate leftovers in an air-tight container.
