One of the best things about ham is also one of the worst things about ham. There are always a lot of leftovers! We love leftovers around here – it means I don’t need to cook every single night. But after a while, leftovers from the same meal can get pretty boring. Using your leftovers in different recipes is a great way to finish up whatever is in your refrigerator.

Ham and Swiss cheese is a classic combination. And when you make it a grilled cheese sandwich, it’s that much better! I don’t like mustard very much, but John does. If you like mustard, add some in when you’re making the sandwich, or keep some on the side for dipping.

Swiss cheese melts very nicely. It “pulls” a little like mozzarella, but isn’t quite as stretchy. Perfect in a sandwich! We prefer Baby Swiss, if you can find it. It has a milder flavor. And when you’re using leftovers from a flavorful ham like this Slow Cooker Cinnamon-Honey Ham, you don’t want to cover up those flavors with a strong cheese.

(You don’t have to use leftover ham in this sandwich. Deli ham will be wonderful as well. Make it any time you want!)

We really like ham sandwiches on seeded rye bread. (Spring is a great time to find that in the grocery store.) If you’re not crazy about rye bread or you have a different favorite, use that one. The best thing about grilled cheese sandwiches (other than how easy they are to make) is that you can customize them however you want!

Grilled Ham and Swiss Cheese Sandwiches

Ingredients
  

  • 4 slices seeded rye bread
  • 4 teaspoons butter
  • 8 slices Swiss cheese
  • 4 slices ham leftover ham or deli ham
  • Optional: mustard

Instructions
 

  • Heat a skillet over low heat.
  • Spread the butter on one side of each piece of bread.
  • Place one slice of bread in the skillet, butter side down.
  • Assemble the first sandwich - 2 slices of cheese, 2 slices of ham, 2 slices of cheese, and the second slice of bread (butter side up). If desired, add mustard on top of the ham.
  • Cook over low heat for 3-5 minutes. Turn the sandwich over once the bread is golden brown and the cheese has started to melt.
  • Cook on the second side for an additional 3-5 minutes, until bread is golden brown, the cheese is melted, and the ham is heated.
  • Cook second sandwich and serve immediately.
