We eat a lot of grilled cheese sandwiches in our house. With a pre-schooler… we eat a lot of grilled cheese. And while I occasionally enjoy the standard white-bread-and-yellow-cheese variety, sometimes I just want something a little more grown up. And yet still cheesy and yummy.
This Apple & Brie Grilled Cheese Sandwich is perfect!
It’s quick to make, so you can still eat “with” your kids. (As much as that ever happens…) You can even make it in the same skillet, so you don’t have an extra dish to wash! It still tastes good cold, so no paste-like cold cheese. And it’s grown-up enough that you can make it even if you don’t have kids! (Or if they are just gone for a few hours.)
Brie cheese is sometimes tough to find. Look in the “fancy” cheese case at your grocery store. In my local store it’s in the front by the fresh produce. Any apple will be great in this sandwich. I like apples like Honeycrisp, Pink Lady, or Jazz. If you want a more tart flavor, go for the Granny Smith.
Have you seen that the Arctic Apple will start to be available in the Midwest in March? I’m pretty excited about these apples… they won’t turn brown after you cut them! So even after kiddo takes a couple of tiny bites and leaves the apple in the living room, it will still look pretty… maybe he’ll even go back and finish it later! Also, it will make my Apple & Brie Grilled Cheese sandwich look more appetizing for even longer. Yay!
Go for broke on the bread. If you have (or prefer) regular white or wheat, by all means, have at it. But if you’re planning ahead a little bit and can find some “fancy” bread, this is the time! Pick up a loaf of seeded rye, or pumpernickel, or (my favorite) English muffin toasting bread. That stuff is hard to find, but it is awesome! I used to find Thomas’ English muffin toasting bread in the bread aisle, now I can only find the store’s bakery brand sometimes. I stock up when I can find it! If you have the time, I highly suggest using this Easy Homemade Bread. You can slice it as thick (or as thin) as you like, and it’s perfect for this sandwich!

Apple and Brie Grilled Cheese
Ingredients
- 2 slices bread any kind
- 2 teaspoons butter
- 1/4-1/2 apple sliced thin
- 1 wedge approx 2 ounces Brie cheese, sliced thin
Instructions
- Spread 1 teaspoon butter on one side of each slice of bread.
- Place one slice of bread, butter side down, in a heated skillet (on medium heat).
- Layer Brie slices, apple slices, and more Brie slices.
- Top with the second slice of bread, butter side up.
- Cook for 2-5 minutes on each side, until the bread is golden brown and the cheese is melted.
- Serve immediately.
I love this grilled cheese. It’s perfect for everyone in my family and, best of all, if there are leftovers, they will still be good cold!
