There is absolutely nothing wrong with a storebought potato salad! They are so convenient, and fast to grab on your way to a party! But sometimes, you just want something a little different. And that’s when you make your own Dilled Potato Salad!
If you can peel potatoes and boil water, you can make this potato salad. There is really nothing special in the preparation… except the love, of course! Well, and the bacon. Because bacon makes everything a little more special!
While the potatoes are cooking, you can cook a few slices of bacon in the oven. That’s the way that I can get bacon perfectly crispy every single time. And it means you don’t have to stand over the stove and get splattered with bacon grease while it’s cooking!
This easy potato salad can be served cold like a classic potato salad. But it’s also delicious warm! Mix it all together right before you want to eat, and serve it with some easy burgers while the potatoes are still warm. It’s the perfect side dish for a summer barbecue, a picnic, any kind of party, or just because!

Dilled Potato Salad
Ingredients
- 3 medium potatoes
- 1 Tablespoon salt
- 1/3 cup mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon seasoned pepper
- 2 teaspoons dried dill weed
- 4 slices bacon cooked crisp
Instructions
- Scrub, peel, and cut potatoes into bite-size pieces.
- Place potatoes and 1 Tablespoon of salt in a large pot. Cover potatoes with cold water, cover, and heat on high until water boils.
- When water is boiling, reduce heat and boil until potatoes are tender, about 10-15 minutes.
- Remove potatoes from water and place in a large bowl.
- While the potatoes are still warm, add mayonnaise, 1/2 teaspoon salt, seasoned pepper, and dill. Mix well to combine.
- Crumble bacon and add to potato salad, toss to mix.
- Serve immediately as a hot potato salad, or cover and refrigerate for 1-2 hours until chilled.
- Store leftovers in an air-tight container.
