Breakfast casseroles are one of our favorite ways to enjoy a family breakfast. And when I realized that we had 6 dozen eggs in our refrigerator (how does that even happen?) I decided we would be having breakfast casseroles for dinner, too!
Our family’s traditional breakfast casserole recipe has sausage in it. I didn’t have any sausage handy, but I had bacon. Lots and lots of bacon. So I put some of that delicious bacon right in this breakfast casserole. Along with plenty of melty Cheddar cheese.
If you don’t have time to put this casserole together in the morning, you can always prep it the night before! Get everything ready in the casserole dish, cover, and refrigerate overnight. Take it out of the refrigerator when you turn on the oven so it can warm up a little bit. It will take a little longer to bake, but it will still be cheesy and delicious!
This breakfast casserole recipe is packed with tons of protein (each egg has 6 grams of protein) and lots of melty cheese. It’s the perfect way to start your day – or end your day, if you like breakfast for dinner!

Cheesy Bacon Breakfast Casserole
Ingredients
- 8 slices bread
- 8 eggs
- 2-1/2 cups milk
- 1 teaspoon salt
- 2 cups shredded Cheddar cheese
- 1 pound bacon cooked crisp
Instructions
- Cut or tear bread into 1-inch pieces. Spread bread in the bottom of a lightly greased 9x13 pan.
- In a medium-sized bowl, crack eggs, milk, and salt. Whisk well to combine.
- Add cheese to egg mixture and mix.
- Cut or crumble bacon into bite-size pieces. Spread bacon evenly over the bread in the baking pan.
- Pour egg mixture over the bacon and bread.
- Bake, uncovered, at 350 degrees for 45 minutes. or until the internal temperature reaches at least 160 degrees, measured with a meat thermometer.
- Let stand for 3-5 minutes before cutting and serving.
To prepare ahead:
- Prepare as instructed above through step 5.
- Cover the prepared casserole dish with aluminum foil or plastic wrap and refrigerate.
- Remove casserole dish from refrigerator and uncover while the oven is preheating.
- Cook, as directed above, until the internal temperature reaches 160 degrees. (May need a longer cooking time.)
