Freezer-Friendly Breakfast Burritos

Freezer-Friendly Breakfast Burritos

There really is nothing quite like cheesy eggs and bacon for breakfast. But who has time for that every day? I don’t know about you, but our mornings are crazy, and I’m more concerned with getting everyone out the door wearing pants and 2 shoes than with cooking breakfast! With these make-ahead Freezer-Friendly Breakfast Burritos, you can have the best of both worlds! (And even eat in your car, if you’re running really late!)

My trick to making these really easy is to use your oven! Make the scrambled eggs in the oven and make the bacon in the oven. If you’re short on time, stash everything in the refrigerator until you’re ready to put the burritos together. Then just quickly heat up the tortillas so they fold easily, stuff them, and stick them in the freezer.

It’s as simple as that!

To make the burritos, first warm up the tortillas in a large skillet (a 12-inch skillet will fit a burrito-size tortilla perfectly). Then place your fillings in the center of the tortilla. Fold the bottom up, then fold the sides in. Finally, fold the top down, and flip it over so the ends are underneath the burrito.

Wrap each burrito in a paper towel (I like to use 1 section of a select-a-size paper towel), then fill a gallon-size Ziploc freezer bag with your burritos. Label and date the bag, and pop them in the freezer!

In the morning, take out as many as you need, microwave them, and hit the road!

I’ve included my recommendations for how much bacon, egg, and cheese you’ll need for 6 burritos in the recipe card below. You can change that up as much as you want if you like more or less bacon or cheese. Just don’t fill the burritos too full, or you’ll have a hard time rolling them up!

Ingredients
  

  • 12 eggs scrambled and cooked (use this recipe to cook scrambled eggs in the oven)
  • 6-8 slices bacon cooked crisp and crumbled (use this recipe to cook bacon in the oven)
  • 1 cup shredded Cheddar cheese
  • 6 burrito-size flour tortillas

Instructions
 

  • Briefly heat tortillas, one at a time, in a 12-inch skillet.
  • Lay tortilla flat on the counter or a cutting board.
  • Roughly divide eggs, bacon, and cheese into 6 portions.
  • Place 1 "portion" of eggs, bacon, and cheese into the center of the tortilla.
  • Wrap the burrito by folding the bottom of the tortilla up, the sides in, and the top down.
  • Flip the burrito over so the "ends" of the tortilla are underneath the burrito.
  • Repeat until all burritos are made.
  • Serve immediately, or freeze for later use.

To freeze burritos:

  • Wrap each burrito in 1 section of paper towel.
  • Place all burritos in a gallon-size Ziploc freezer bag.
  • Label and date the bag.
  • Lay flat in freezer.

To thaw burritos:

  • Remove as many burritos as needed from the freezer.
  • Microwave on high for 60-90 seconds each side.
  • Let cool, the center of the burrito may be very hot!
