bacon
cooked crisp and crumbled (use
this recipe to cook bacon in the oven

cup
shredded Cheddar cheese

burrito-size flour tortillas
Instructions
Briefly heat tortillas, one at a time, in a
12-inch skillet
.
Lay tortilla flat on the counter or a
cutting board
.
Roughly divide eggs, bacon, and cheese into 6 portions.
Place 1 "portion" of eggs, bacon, and cheese into the center of the tortilla.
Wrap the burrito by folding the bottom of the tortilla up, the sides in, and the top down.
Flip the burrito over so the "ends" of the tortilla are underneath the burrito.
Repeat until all burritos are made.
Serve immediately, or freeze for later use.
To freeze burritos:
Wrap each burrito in 1 section of
paper towel
.
Place all burritos in a
gallon-size Ziploc freezer bag
.
Label and date the bag.
Lay flat in freezer.
To thaw burritos:
Remove as many burritos as needed from the freezer.
Microwave on high for 60-90 seconds each side.
Let cool, the center of the burrito may be very hot!
