Peppermint Candy Ice Cream

My husband loves Christmas time. And not for the reasons you might be thinking. He loves when the peppermint ice cream flavors are available! We buy it at the grocery store, and he picks peppermint ice cream every chance he gets at a restaurant. So it was just natural to try to make our own!

If you have never made homemade ice cream before, you won’t believe how easy it is. As long as you get the ingredients mostly measured right, (and remember to store the ice cream freezer in your freezer) you can’t mess it up!

Homemade ice cream usually freezes somewhere between the consistency of soft serve ice cream and hand-dipped ice cream. I like mine to be a little more frozen. When it’s done in the ice cream maker, I transfer the ice cream to a freezer-safe container (I love these from Tovolo) and let it sit in the freezer for an hour or two.

Unless it’s an ice cream emergency. Then I dive right in.

This Peppermint Candy Ice Cream didn’t freeze as hard in the ice cream maker as most of the other flavors I have tried. I think the combination of the mint extract and the mint from the starlight candies made it less solid. But don’t worry, a little extra time in the freezer and it was perfect!

Did I mention an ice cream emergency? You can make this homemade ice cream in less than 20 minutes, start to finish. That’s faster than I can get out to the store and back! So I always keep ingredients for at least a basic vanilla ice cream on hand!

Ingredients
  

  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon pure peppermint extract
  • 2 cups heavy whipping cream
  • 15 peppermint starlight mints
  • Optional: Extra crushed peppermints and mini chocolate chips for garnish

Instructions
 

  • In a medium bowl, combine sugar, salt, and whole milk. Whisk until sugar is dissolved.
  • Add peppermint extract and whipping cream. Whisk to combine.
  • Assemble ice cream maker and turn on.
  • Pour ice cream mixture into the bowl of the ice cream maker.
  • While the ice cream is freezing, unwrap peppermints.
  • Roughly chop using a food processor (or smash in a Ziplock freezer bag with a hammer or the flat side of a meat tenderizer).
  • When ice cream is nearly finished (about 10-12 minutes), add crushed peppermints.
  • Let churn until frozen, about 15-18 minutes total.
  • Serve immediately, or store in a freezer-safe container.
