Are there two flavors that go together better than garlic and parmesan? This combination is just so delicious. And when you add it to something that’s already amazing, like mashed potatoes, you’ve got an instant hit!
Yes, these are “from scratch” mashed potatoes. But, don’t be afraid! If you can run a peeler, boil water, and turn on an electric mixer, you can make these mashed potatoes!
Yes, even though you’ll be peeling these potatoes, you do need to wash them first. Remember, potatoes grow in the ground. Even though they are washed before they hit the grocery store, there is usually still a little dirt left on them. Give them a quick scrub under cool, running water with a vegetable brush to get any stubborn dirt off before you start to peel. Then just give them a rough chop. You want the potatoes to be about the same size so they cook evenly.
Once your potatoes are boiled and soft, transfer them to the bowl of an electric mixer. This is where it gets fun! You can tweak this recipe to make your mashed potatoes exactly the way you like them. Does your family like very smooth mashed potatoes? Mix them on a higher speed for a longer time. Like a few lumps left? Mix them on low for a shorter time. You can add more or less milk to make the potatoes as thin or thick as you want. And add more or less garlic and cheese to make the flavor really pop, or pretty mild.
PRO TIP – Make these mashed potatoes even easier by using grated Parmesan cheese. If you want to get “fancy,” you can use a block of Parmesan cheese (usually in the specialty cheese case near the produce section) and grate your own.
The best thing about mashed potatoes is that there is always so much, you can taste a bit as you go and still have plenty left to feed everyone!
Enjoy!
