cream cheese (1/2 of an 8-ounce block
1/2 to 1
cup
milk

teaspoon

garlic

grated Parmesan cheese
Optional: dried parsley or chives for garnish
Instructions
Wash and peel potatoes. Chop potatoes into roughly equal-sized pieces.
Place potatoes, water, and 3 Tablespoons salt in a large pot. (A pot
with a built-in strainer like this
makes draining the potatoes easy.)
Cover and heat over high heat.
Brint water to a boil, then lower temperature to maintain a simmer.
Cook potatoes until they are soft, approximately 15-20 minutes.
Drain potatoes and transfer to the bowl of an
electric mixer
.
Add butter, cream cheese, 1/2 cup milk, salt, garlic, and Parmesan cheese.
Mix, starting on low speed and gradually working up to medium speed, until potatoes reach the desired consistency.
If you like mashed potatoes to be a little "thinner," add more milk.
If you like mashed potatoes to be a little "thicker," do not add any extra milk, and mix for less time.
Serve immediately, or transfer mashed potatoes to a
6-quart slow cooker
.
Cover the slow cooker and turn to the warm or low setting to keep warm.
Top servings with dried parsley or chives if desired.
