Oven Roasted Parsley Potatoes

You really can’t go wrong with meat and potatoes… But every once in a while you want something different than a plain old baked potato or mashed potatoes. We discovered The Little Potato Company potatoes, and I am so in love!
These potatoes are so easy to make, our pre-schooler helped me with them the other night. If I wasn’t worried about him spilling olive oil all over the counter, he could have done all the prep work by himself! Then just toss them in the oven (that’s a grown-up job), and you’re done.
Can I say it? They’re so easy a 4-year-old can do it!
Use a bigger bowl than you think you need to mix the potatoes up with the seasoning. (Especially if a pre-schooler is helping. We had a few runaway potatoes.) Drizzle the olive oil over the potatoes, then sprinkle with the other seasonings. Use a silicone spatula to mix everything together really well. The potatoes should be coated well with the olive oil and parsley before you move them to the baking sheet.
I like to stir the potatoes a little halfway through cooking. This helps them to get that beautiful browned color all over, instead of just on one side. But if you forget and just ignore the potatoes until they are done, they’ll be fine, too!

Oven-Roasted Parsley Potatoes
Ingredients
- 1.5- pound bag Little Potato Company Boomer Gold potatoes
- 3 Tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 3 Tablespoons parsley flakes
Instructions
- Place potatoes in a large bowl.
- Add olive oil, salt, and parsley to potatoes. Toss to coat.
- Spread potatoes out on a lipped baking sheet.
- Bake at 400 degrees for 30 minutes, stirring once during cooking.
