Lemon-Pepper Pork Chops

It took me a few tries to get these pork chops just right. (Yes, even food bloggers don’t cook everything perfectly on the first try.) I think you’re going to be really pleased with the final recipe!
I usually advocate grilling steaks and pork chops quickly, over high heat. I tried that with these pork chops, and I ended up with charcoal. I mixed a little vegetable oil in with the seasoning, and the flames liked the oil just a little too much! So you’ll need to preheat the grill well, but then turn the heat down before you put the pork chops on.
And please, please don’t overcook your pork chops! Pork should be cooked to an internal temperature of 145 degrees F, then rested for 3 minutes before it’s served. You can use the guidelines in this post about how to cook the perfect steak, and double-check with a meat thermometer. A properly-cooked pork chop can still have a little bit of pink in the middle, so don’t let that scare you off!

Lemon-Pepper Pork Chops
Ingredients
- 4 bone-in pork chops approximately 1 inch thick
- 1 Tablespoon vegetable oil
- 2 Tablespoons lemon-pepper seasoning we love Lawry's Lemon-Pepper
Instructions
- Preheat grillto high.
- In a small bowl, mix the vegetable oil and lemon-pepper.
- Using your fingers, rub the lemon-pepper into both sides of each pork chop.
- Turn the grill down to medium heat.
- Place pork chops on the grill. Cook for 4-5 minutes on each side, until the pork chops reach at least 145 degrees F.
- Remove pork chops from the grill and let rest for 3 minutes before serving.
