Between spring break for the local schools, Easter, the cough that won’t quit, and Indiana Farm Bureau board meetings, we were a busy family last week!

Joseph was pretty worried that he wouldn’t be able to find many eggs at our town’s egg hunt over the weekend. We talked about how the hunt would go before we got there, and we made a plan for how he would find some eggs. He did a great job, got lots of eggs, and got to meet the Easter bunny! (He’s pretty sure this one is the Easter bunny’s helper, because he could see his hair sticking out of the back of his mask when he turned around. Can’t put anything past this kid!)

Now we’re working our way through all that Easter candy… oof. This week’s meal plan has some great ways to use up your leftover ham (here are some more ideas), a delicious main-course salad (add some grilled chicken breast if you want), and a bright and summery tomato salad for a side dish.
