Chocolate Chip Oatmeal Cookies

Chocolate Chip Oatmeal Cookies

My first year as a resident at Purdue University College of Veterinary Medicine, I had a student who would make cookies similar to these for us. (Don’t worry, we gave her great grades!) This recipe from “Mom Knows Best” (by Gooseberry Patch) makes cookies that are a little more cake-like than hers, but they still remind me of her.

These cookies are made with quick-cooking oats. All oatmeal is a whole grain, so you can almost convince yourself that they’re healthy. (If you forget about the 2 sticks of butter you used…)

I love that these cookies are made with all brown sugar, instead of a mixture of brown and white sugar. Nothing against white sugar (I love all sugar!), I just think the brown sugar gives the cookies a little richer flavor.

The last time I made these cookies, all I had on hand were mini chocolate chips. I prefer them with the regular size chocolate chips, but in a pinch, any chocolate chips will do!

They are pretty easy to make, and little hands can definitely help you scoop out the cookie dough. These cookies are perfect for an afternoon snack, or for a little treat for you after the kids are all in bed!

Chocolate Chip Oat Cookies

Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup hot water
  • 2 cups quick-cooking oats uncooked
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips regular size or mini

Instructions
 

  • In an electric mixer, cream together butter and brown sugar on medium-high until light and fluffy.
  • Reduce speed to medium-low. Add baking soda, vanilla, and hot water. Let mix until combined.
  • Add oats, flour, and salt. Let mix until combined.
  • Fold in chocolate chips.
  • Drop by tablespoonfuls onto lightly greased cookie sheets.
  • Bake at 350 degrees for 10 minutes, until edges are just beginning to turn golden. Cool on wire racks.

Ingredients
  

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup hot water
  • 2 cups quick-cooking oats uncooked
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • In a large bowl, cream together butter and brown sugar.
  • In a separate bowl, combine baking soda, vanilla, and hot water. Add to butter mixture.
  • Stir in oats, flour, and salt. Fold in chocolate chips.
  • Drop by tablespoonfuls onto lightly greased baking sheets.
  • Bake at 350 degrees for 10 minutes, until edges are just beginning to turn golden. Cool on wire racks.
