Bacon-Ranch Cheeseburger Cups

What are great toppings on a burger? Of course, lettuce, tomato, pickles, and ketchup. And don’t forget the cheese! But add crispy bacon and Hidden Valley Ranch Dressing Mix? Oh, my, this is the recipe for a very delicious burger!
These Kid-Friendly Cheeseburger Cups were the beginning of this recipe… but everything is better with bacon, right? Of course it is! You’ll want to keep the original recipe in your pocket for a rainy day, but I highly recommend the Bacon-Ranch version, too!
No matter how you like your cheeseburgers, they are always fun in cups. Yes, I know, you already eat burgers with your hands. But putting them in a muffin cup makes them easier to eat with one hand, and they are perfect for little hands to hold!
I used Pillsbury Grands Buttermilk Flaky Layers Biscuits for this recipe. I haven’t used the flaky layers kind before. I love them in this recipe! I split each biscuit in half, so each cup was a little thinner. This let me add a lot more filling to the cup. But those flaky layers still puffed up a bit and made for a great crust. And I love the way the biscuits get golden brown on the outside and are still flaky and chewy in the middle. Biscuit perfection! I had 2 extra biscuits, so I just baked those according to the package directions and had them for breakfast the next morning.
To make this recipe even easier, I cooked the bacon in the oven while I was browning the ground beef on the stove. I love when my kitchen can help me multitask, don’t you?

Bacon-Ranch Cheeseburger Cups
Ingredients
- 1 pound ground beef
- 1/4 cup milk
- 1-1 ounce packet Hidden Valley Ranch Seasoning & Salad Dressing Mix
- 6 pieces bacon cooked crisp and crumbled
- 1 cup shredded Cheddar cheese
- 1 container Pillsbury Grands Buttermilk Flaky Layers Biscuits
- Optional: extra shredded cheese
Instructions
- Brown ground beef and drain.
- In a small bowl, mix milk and ranch dressing mix.
- Add ranch mix, bacon, and shredded Cheddar cheese to ground beef. Cook on low until heated through and cheese starts to melt.
- Separate each biscuit into two thinner parts. Gently press each biscuit half into a circle, approximately 5 inches across. Press each biscuit half into a muffin pan. (You'll have 2 extra biscuits. Cook those according to package direction and have them on the side or for breakfast tomorrow!)
- Divide the beef mixture evenly among the biscuit cups.
- Bake at 350 degrees for 15-20 minutes, until the biscuits brown.
- Top with extra cheese and let sit for 5 minutes before serving.

We tried and enjoyed these for dinner tonight. We skipped the bacon but otherwise followed the directions. Overall really enjoyed them. Even got my picky eaters to eat “hamburger cupcakes,” which may end up in a school lunchbox. Thanks for a great recipe!
