If you guys have seen my Facebook Live video about the different types of rib cuts, you know how much I love beef short ribs. I think short ribs are one of the most under-rated beef cuts there is!
Short ribs do take just a little bit of know-how to make them so very delicious. Short ribs look well-marbled like a beautiful steak, but you can not cook them like you would cook a steak, or even like you would cook pork ribs. Steaks can be cooked hot and fast, but short ribs need to be cooked low and slow. This way, they will be so very tender and delicious. If you try to cook short ribs hot and fast, you’ll have a disappointing, tough, chewy piece of meat. And you’ll wonder why you spent so much money on it.
And then you’ll be mad at me for recommending this recipe. Nobody wants that!
Quickly sear the ribs (2-3 minutes per side) on all sides. Then layer them in your 6-quart slow cooker with onion, some seasonings, and beef broth. Turn on the slow cooker and walk away. Don’t come back for 6-8 hours. By then, the short ribs should be fork-tender and practically falling off the bones.

Slow Cooker Italian Short Ribs
Ingredients
- 2-3 pounds beef short ribs
- 1 Tablespoons extra-virgin olive oil
- 1/2 onion chopped
- 1 Tablespoon Italian seasoning
- 4-6 cups beef broth
- Salt & Pepper to taste
Instructions
- Cut short ribs into single-rib sections and season with salt and pepper.
- Heat olive oil in a large saucepan over medium heat.
- Working in batches, sear ribs on all sides in the hot skillet. You want the outsides of the ribs to brown. Two to three minutes per side should be plenty.
- Transfer ribs to slow cooker.
- Use 1/2 cup beef broth to deglaze the pan, and pour this over the ribs.
- Layer chopped onion over ribs.
- Crush the Italian seasoning in your palms, and sprinkle over the ribs.
- Pour beef broth over ribs. Your slow cooker should be nearly full, and the ribs should be almost (or completely) covered with broth.
- Cover and cook on low for 6-8 hours.
- Ribs are done when they are fork-tender.
