Peach-Glazed Pork Chops

Foil packets make grilling almost fool-proof. These two-ingredient Peach-Glazed Pork Chops have the perfect grilled summer flavor!

If there’s anything I love better than cooking on the grill, it’s cooking in a foil packet on the grill. I’ll admit, my foil packet grilling has been pretty limited to potatoes and other vegetables. But “Grilling and Campfire Cooking” by Gooseberry Patch has an entire chapter dedicated to foil packet grilling. And it has opened my eyes! Just check out these Peach-Glazed Pork Chops… grilled in a foil packet!

**PRO TIP #1 – Use heavy-duty aluminum foil. The regular stuff just won’t cut it.

**PRO TIP #2 – Cut your aluminum foil sheet bigger than you think you need it. It’s much better to have a loosely-wrapped packet than to not have enough foil, and have a packet that doesn’t quite close!

The trick to these pork chops is to quickly sear them over high heat on the grill first. That gives you the beautiful grill marks, and locks all the juices inside. Then transfer the pork chops to an aluminum foil packet (I used 2 packets to cook 4 chops), add the glaze, and off you go! No, really, head off, grab a cocktail, and enjoy the warm weather! These pork chops can manage another 10-15 minutes in their packets without you bothering them.

Serve them up with Balsamic Grilled Tomatoes and some potatoes sliced and grilled in another foil packet and you’re ready to go!

Ingredients
  

  • 6-8 pork chops 3/4-1 inch thick
  • 16- ounce jar peach preserves

Instructions
 

  • Grill pork chops over high heat for 1-2 minutes on each side, just until seared.
  • Place chops on a 24-inch (or longer) length of heavy-duty aluminum foil. Spoon preserves over chops. Wrap in foil, forming a packet.
  • Grill over medium-high heat another 10-15 minutes until chops are cooked through, to a minimum internal temperature of 145 degrees F measured with a meat thermometer.
