Beef? Noodles? Sauce? Yes, please! This recipe for Meatball Stroganoff is so simple… The hardest part is cooking the noodles!!

I found this Meatball Skillet recipe in “303 Simple & Satisfying Recipes” by Gooseberry Patch and I knew it would be a crowd-pleaser in this house. Seriously – I had to fight John to get this last serving so I could photograph it for you!

The original recipe called for making your own meatballs. While I appreciate that and have done it before, I just don’t have the time to make my own meatballs every time. So I used a bag of frozen meatballs and thawed them before I tossed them in the skillet. Talk about a time saver! Move the package from the freezer to the refrigerator the night before or first thing in the morning. And since they are fully cooked, all you need to do is quickly brown them. Then they are ready to go!

**PRO TIP – If you do make your own meatballs, make a double batch and freeze some for later!

This recipe cooks up pretty quickly. The longest part was waiting for the water to boil to cook the noodles. Just whatever you do… don’t watch the pot while you’re waiting for it to boil. I hear it takes forever that way!

Ingredients
  

  • 1 pound frozen meatballs thawed
  • 3 Tablespoons extra-virgin olive oil divided
  • 2 cups beef broth
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream
  • 8- ounce package wide egg noodles

Instructions
 

  • Cook noodles according to package directions. When noodles are cooked, drain, toss with 2 Tablespoons of the olive oil, and set aside.
  • While the noodles are cooking, brown meatballs in 1 Tablespoon olive oil in a large skillet over medium heat (5-7 minutes). Remove meatballs from skillet and drain on paper towels.
  • In a small bowl, whisk together broth and flour. Pour the broth mixture into the skillet. Heat, stirring frequently with a whisk, until the gravy thickens, about 5 minutes.
  • Stir the sour cream into the gravy. Continue cooking until heated through, about 5 minutes.
  • Add meatballs to the sauce. Toss gently to coat. Continue cooking until meatballs are heated through.
  • To serve, spoon meatballs and gravy over noodles on individual plates.
