Slow Cooker Loaded Potato Soup

John’s family traditionally has a light meal of soup, bread, cheese, and crackers together on Christmas night. Potato soup is often the soup of choice for the night. Because this is a holiday tradition, I don’t think to make potato soup very often outside of the holidays. So it always seems like a special treat when we do have it.
Any soup that I can make in my slow cooker is a winner for me… I throw it all together in the morning, and then get to smell it simmering away all day long. And I don’t have to worry about checking the burner or keeping kiddo’s fingers off the stove controls.
This “loaded” potato soup has tons of great flavor – but there is actually no cheese in this recipe! Now… to me (and to Farmer Doc), it’s just not “loaded potato soup” without cheese and bacon. So be sure you top yours with plenty of shredded cheese and crumbled bacon! (And a dollop of sour cream would make this soup extra-rich and creamy.) It also ends up being a very thick soup… almost more like a chowder. If you want yours to be a little less thick, then just stir some milk into the soup in the last 30 minutes of cooking.

Loaded Potato Soup
Ingredients
- 32- ounce package frozen hashbrowns with onions and peppers
- 8- ounce package cream cheese diced
- 10-3/4 ounce can cream of mushroom soup
- 10-3/4 ounce can cream of celery soup
- 10-3/4 ounce can cream of chicken soup
- Salt and pepper to taste
- Garnish: shredded Cheddar cheese crumbled bacon, chopped green onions
Instructions
- Place all ingredients, except garnishes, in a 6-quart slow cooker. Stir to combine.
- Cover and cook on high 4-6 hours, stirring occasionally.
- Garnish individual servings as desired.
