The blackberries are starting to ripen… that can only mean one thing – it’s almost fair time! This happens every single year. The blackberries are ready during the two weeks that John is busy helping with the Gibson County Fair. So I’m left to pick, clean, and process all the berries with only the help of our son! He loves to help pick, but his attention span is… well… he’s 3.
But, gosh, I do love having all these fresh blackberries around! Blackberry cobbler, blackberry ice cream, and blackberry bread are staples around here during the summer.

Kimmi’s Dairyland has a meal that is perfect for starting your week. Kimmi’s Chicken Caesar Wraps are sure to be a huge hit and come together as quickly as 1, 2, 3! I know in my house, they are loved by everyone, regardless of age.
My Fearless Kitchen’s Slow Cooker Chicken Chili is one you won’t want to skip. Put all of the ingredients into your slow cooker and 8 hours later, dinner is served.
Easy Chicken Piccata from Organized Island is another quick and easy recipe. Best of all, you can tailor it to your families taste buds Want more lemon? Go for it! Not a caper lover? Leave them out!
Christina at The Shirley Journey is sharing her Chicken Chilaquiles with Eggs. It’s the perfect recipe to use when introducing your kids to Mexican cooking and they can even help whip it together.
The Crumby Cupcake has a terrific idea with her Kielbasa and Pierogies with Summer Vegetables. Erica is showcasing the beauty of summer veggies. And that dijon vinaigrette? Well, just be sure that you don’t skimp on it when you make yours.
I have a fabulous dessert option this week; Desserts Required’s Raspberry Chocolate Kiss. The creaminess of the chocolate filling pairs perfectly with fresh raspberries and the mascarpone ensures that the dessert is not overly sweet.
