We love meatballs around here. They are fun to make (once in a while), and they are easy to buy frozen and keep on hand. They are so easy to use right out of the freezer! (Click here to see more meatball recipes we love.) But have you ever used pre-cooked meatballs on the grill? A fast dinner just got so much faster!
I used frozen meatballs (thaw them overnight in the refrigerator first), red and yellow bell peppers, zucchini, and cherry tomatoes. We love that summer veggie combination. If you prefer summer squash to zucchini, switch those veggies out. If you aren’t crazy about bell peppers, but love onion, use that instead! Kabobs like this are so easy to customize, you can have a slightly different combination for every member of your family!
But if you have never tried grilled cherry tomatoes, I strongly suggest you use those in this recipe. Wow, are they delicious!
I got the idea to use pre-cooked frozen meatballs from a recipe in “Grilling and Campfire Cooking” from Gooseberry Patch. It’s so simple and brilliant, I really can’t believe I hadn’t thought of it before!
What Kind of Skewer Should I Use for Grilled Kabobs?
The kind of skewer you use for grilling makes all the difference – especially when you’re using round foods like meatballs, zucchini, and cherry tomatoes that will easily spin on your skewers.
I prefer to use metal skewers. If you use bamboo skewers, make sure to soak them in water for a few hours first. That will help them not catch fire on your grill. (Little details, I know.)
I also like to use flat skewers instead of round ones. With round, or even square, skewers, the food will spin more easily, making it difficult to evenly cook on the grill. With a flat skewer, it’s much harder for the food to spin on the stick, so you can quickly and easily turn the food over, and make sure you’re getting the “right” side down on the grill.
Now you’re ready to go to town and have a grilled kabob night!
Enjoy!
