When you find out just a couple of hours before the party that you’re supposed to bring food to share… what do you do? You make a super-quick snack mix, that’s what!

I made a batch of this snack mix last-minute to go to a Halloween party. It’s super-simple to make and only takes a few minutes. You should wait for the cookies to cool off a little before you add the Oreo Thins cookies and the Peanut M&Ms, or they will start to melt a bit. But cooling only takes a few minutes.

Usually, I microwave our snack mix recipes for 3 minutes total (microwave for 1 minute, stir, repeat twice). With this recipe, the mini Nilla Wafers and the Scooby-Doo Graham Cracker Sticks started to fall apart a little bit. So this recipe only needs 2 minutes total microwave time. And be sure to use a soft silicone spatula to stir instead of a hard wooden or metal spoon. With a harder spoon, the cookies are more likely to crumble.

Other than that, it’s crazy easy, and so good!

Did I mention that the kids at the Halloween party polished it off? Yep. I had to make a new batch to take these pictures. Darn…

Ingredients
  

  • 2 cups Mini Nilla Wafers
  • 2 cups animal crackers
  • 2 cups Scooby-Doo Graham Cracker Sticks cinnamon or honey
  • 1 cup Peanut M&Ms
  • 6- ounce bag Oreo Thins Bites
  • 5 Tablespoons butter
  • 1 teaspoon apple pie spice

Instructions
 

  • In a large microwave-safe bowl, mix the Nilla Wafers, animal crackers, and Scooby Doo Grahams.
  • Place butter in a small microwave-safe bowl and microwave to melt.
  • Stir apple pie spice into melted butter.
  • Pour butter mixture over cookie mixture and toss (with a soft silicone spatula) to coat.
  • Microwave cookie mixture on high for 1 minute. Remove from microwave and stir (being sure to scrape the bottom of the bowl).
  • Microwave cookie mixture on high for 1 more minute.
  • Remove from microwave, carefully stir, and spread out on paper towels to cool.
  • When the cookies are cool, return to the bowl and add the M&Ms and Oreos. Gently toss to mix.
  • Serve immediately.
  • Store leftovers in an air-tight container or Ziploc bags.
