Now I love leftovers, don’t get me wrong. Leftovers are awesome. But the exact same leftovers, again and again and again, get pretty boring. So this Turkey Reuben Sandwich was a great change from a plate of reheated turkey… again.

This sandwich was a snap to put together. I used thick-sliced turkey breast left over from a roast turkey, but you could easily use deli-sliced turkey instead. It was so fast to put together, you can bet we’ll be doing this again!

John and I both keep pretty busy schedules. And when you throw Toddler Doc into the mix, we are one hopping family! In fact, it’s pretty common that we get Toddler Doc to bed, finish up with a few chores, and look up to realize that it’s after 8:00pm (or after 9:00pm…) and we haven’t eaten yet. This is a really big problem during the summer, when John likes to work outside until dark… which often means 10:00pm around here!

These sandwiches were so quick to put together. They do need to heat up on your stove for just a few minutes, but don’t let that scare you. I used my cast iron griddle, preheated it while I was assembling the sandwiches, and then they took less than 5 minutes to warm through. Such an easy meal for a busy weeknight, any time of the year!

These sandwiches will be a welcome change from grilled cheese or scrambled eggs when John comes in from working cows or building fence late at night. He is usually starving by this time, and this hearty sandwich will fill him up much better than a plain old grilled cheese!

Serve these sandwiches up with some traditional Thanksgiving leftovers, with some French fries, with a big handful of chips, or with some fresh veggies. You can’t go wrong!

Ingredients
  

  • 1/4 cup butter softened
  • 8 slices rye bread
  • 1/4 cup Thousand Island dressing
  • 4 slices Swiss cheese
  • 1 pound sliced cooked turkey breast
  • 1/2 cup sauerkraut well drained

Instructions
 

  • Spread butter on one side of each slice of bread. Spread the other side of bread with Thousand Island dressing.
  • Top four of the bread slices (dressing side up) with 1 slice cheese, 4 ounces sliced turkey, and 2 Tablespoons sauerkraut. Place remaining bread on top of each sandwich (dressing side down).
  • Heat alarge skillet (or cast iron griddle) over medium heat. If using cast iron, decrease heat to low once the surface is hot.
  • Cook sandwiches on first side until golden brown. Flip sandwiches over, then cook until heated through and cheese is melted.
