Spread butter on one side of each slice of bread. Spread the other side of bread with Thousand Island dressing.
Top four of the bread slices (dressing side up) with 1 slice cheese, 4 ounces sliced turkey, and 2 Tablespoons sauerkraut. Place remaining bread on top of each sandwich (dressing side down).
Heat alarge skillet (or cast iron griddle) over medium heat. If using cast iron, decrease heat to low once the surface is hot.
Cook sandwiches on first side until golden brown. Flip sandwiches over, then cook until heated through and cheese is melted.
