Slow Cooker Spinach-Artichoke Dip

I’m a big fan of spinach-artichoke dip. I get it at restaurants all. the. time. But I’ve never made it myself. It was always one of those “special occasion” foods. (You know, because eating out is such a special occasion. Or just an excuse. Whichever.)
Then I came across this recipe to make Spinach-Artichoke Dip in the slow cooker. This is from one of Gooseberry Patch‘s cookbooks, “Slow-Cooker Fall Favorites.” Hello, love! And you won’t believe how easy this was to make! A little bit of chopping, a little bit of patience, and a little bit of mixing and you’re on your way to garlicy-cheesy-spinachy-artichokey goodness!
I recently made this recipe again, so I took some new photos. But the story behind the original photos is so good, I just had to keep that story here… So check out the story below, but don’t worry, the “floor dip” isn’t in these pictures!
Now I have a secret to tell you. And you have to promise to not tell anyone!
I was getting this dip ready to photograph. My small helper was in the kitchen with me, playing “quietly” with a metal bucket on the ceramic tile floor. I pulled the container out of the refrigerator, and spooned most of it into this cute little bowl. I was moving the bowl from one counter to another, and trying to put it into the metal frame. (With background noise of “ba-ba-ba” and crash! echoing through the kitchen.)
I dropped the bowl.
It landed on my foot, and then rolled onto the floor.
All the dip ended up on the floor.
I yelled, loudly. I might have definitely cursed.
In fact, I yelled so loud, I made Baby Doc cry.
After I comforted him (it didn’t take long), I went back to check on my mess.
Yep, yummy garlicy-cheesy-spinachy-artichokey dip all over the floor. And Baby Doc headed that way to see what mommy was doing! Thankfully, when the bowl landed on my foot, its fall was broken and the bowl didn’t break. I didn’t have enough left in the original container to fill the bowl again.
So I scooped everything off the floor, put it back in the bowl, and took some pictures.
I wiped some off Baby Doc’s knees. But I didn’t add that to the bowl.
When I saw how the pictures were coming out, I wanted to add a little more dip to the bowl. But I also wanted to eat the rest of it for lunch, so I didn’t want to mix the “good” dip in with the “floor” dip. So the bowl in the photo looks a little more empty than I wanted. Sorry.
But let me tell you, I savored every last garlicy-cheesy-spinachy-artichokey bite of the dip I had left!

Slow-Cooker Spinach-Artichoke Dip
Ingredients
- 14- ounce can artichoke hearts drained and chopped
- 6- ounce bag fresh spinach roughly chopped
- 2 8- ounce packages cream cheese cubed
- 2-1/2 cups shredded Monterey Jack cheese
- 2-1/2 cups shredded mozzarella cheese
- 3 cloves garlic minced
- 1/4 teaspoon pepper
- pita chips and assorted sliced veggies for dipping
Instructions
- Combine chopped artichokes, spinach, cheeses, garlic, and pepper in a 6-quart slow cooker; mix well.
- Cover and cook on low for 2-3 hours, stirring occasionally, until cheeses are melted and dip is smooth.
- Reduce heat to warm for serving.
- Serve with pita chips and sliced veggies for dipping.
