Did you know that it’s actually really easy to cook a pot roast? It seems like it should be hard – it’s a large piece of beef, after all! But they are deceptively simple! Find out how easy it is to make a pot roast, and let’s get to cooking!
Seriously. Steaks are harder. You have to watch them to make sure they don’t get overcooked, dry, and tough. A pot roast can get dried out, but it’s harder to do with a large roast than it is with a small steak.
How Long Do You Cook a Pot Roast?
Here’s the secret.
Cook it all day long.
Seriously. Toss it in your slow cooker with a bunch of beef broth and some veggies. Turn it on low. And walk away.
You’ll want to check it after 6-8 hours. When it is fork-tender (meaning that it all but falls apart when you stick a fork in it), it’s done. If you cook it for too long, it will dry out, even sitting in a bath of beef broth. But don’t stress about it… it really is hard to over-cook a roast in a slow cooker!
I used a rump roast in this recipe, but you can use any type of roast you want. Chuck roast, arm roast, or sirloin roast would also work well in this recipe.

Easy Slow Cooker Pot Roast
Ingredients
- 1 Tablespoon extra-virgin olive oil
- 3-4 pound beef rump roast or chuck roast
- Salt & Pepper to taste
- 2 onions quartered
- 1 pound carrots about 4 large, peeled and cut into 3-inch chunks
- 1 Tablespoon whole peppercorns
- 3 cloves garlic minced
- 2 TablespoonsItalian seasoning
- 32- ounce box beef broth
Instructions
- Heat olive oil in a large skillet.
- If the beef roast is tied with butcher string, leave the string in place.
- While oil is heating, generously sprinkle salt and pepper on all sides of roast.
- Sear roast in hot oil, for 3 minutes on each side.
- Place roast in a 6-quart slow cooker.
- Add onion and carrots to slow cooker, place around roast.
- Add peppercorns and garlic to slow cooker.
- Crush Italian seasoning and add to the slow cooker. (Place 1 Tablespoon in the palm of one hand. Quickly rub hands together over slow cooker - seasoning will be crushed between your hands and fall into the slow cooker.)
- Pour broth over roast.
- Cover and cook on low for 6-8 hours, until fork tender.
- Remove roast from slow cooker and let stand for 5 minutes.
- If the roast is tied with butcher twine, remove twine.
- Slice and serve.
