Turkey Mac and Cheese

We always end up with piles of Thanksgiving leftovers. Now, I’m a fan of turkey with all the fixings, but eating the same meal – again and again and again – gets a bit boring. So I’m always looking for different things to do with our turkey leftovers. This Turkey Mac & Cheese was a big hit with my whole family!

Freezer-Friendly Turkey Mac & Cheese

The best part about this? There was no cooking to be done the day I put it together! Seriously. Use some leftover turkey, a few hard boiled eggs, and toss the noodles in uncooked. Wrap it all up in a disposable 9×13 aluminum pan. Cover it with Saran Wrap and heavy-duty aluminum foil, and pop it in your freezer for later! (Don’t forget to label it with the name, date, and cooking instructions.)

Did I mention that my whole family liked this dish? My parents were in town, and even my dad (who is a bit of a picky eater) went back for seconds. And Baby Doc? Oh, he loved the cheesy sauce!

Just make sure you have plenty of napkins on hand. The cheese sauce is delicious, and there is lots of it!

Turkey Mac and Cheese

Adapted from the Iowa Turkey Federation's recipe collection.

Ingredients
  

  • 2 cups cooked turkey chopped
  • 2 cups shredded cheddar cheese or Velveeta cheese
  • 2 cups uncooked macaroni
  • 1/2 cup chopped onion
  • 2 10-3/4 oz cans cream of chicken soup
  • 3 hard boiled eggs chopped
  • 2 cups milk
  • 1 cup Panko bread crumbs
  • 1/4 cup butter melted

Instructions
 

  • Mix all ingredients (except bread crumbs and butter) together in a 9x13 inch casserole dish.
  • Refrigerate overnight or freeze, if desired.
  • Bake uncovered at 350 degrees for 30 minutes.
  • Mix bread crumbs with butter. Spread on top of casserole.
  • Return to oven, and bake uncovered for an additional 30 minutes.
