It’s got turkey. And bacon. What more do you need? Oh yeah, there are also a ton of veggies hiding in there, so it’s practically a one-dish meal. Serve it with some yummy bread, a salad, or some chopped fresh veggies and dinner is done!
I found this recipe for Slow Cooker Herbed Turkey & Wild Rice in “Slow-Cooker Christmas Favorites” by Gooseberry Patch. This cookbook has plenty of recipes to get you into the holiday mood!
This recipe uses wild rice instead of “regular” brown or white rice. We almost never eat wild rice around here, because it takes so long to cook on the stovetop. But this made it easy – toss the uncooked rice in your slow cooker in the morning, and it will be done by dinner time! Wild rice has a little different texture than brown or white rice. It starts out as thin black grains, but as it cooks the inside sort of “pops” out, and you get this beautiful mixture of black and white. There is also a little bit of a crunch as you bite into it (as long as you don’t cook it too long). Give it a try, you won’t be disappointed!
This is the perfect recipe to use your leftover turkey. The sage, thyme, and parsley give it that classic Thanksgiving flavor, but the wild rice makes it something a little more special.

Slow Cooker Herbed Turkey and Wild Rice
Ingredients
- 6 slices bacon coarsely chopped
- 1 pound turkey cut into cubes
- 1/2 onion chopped
- 2-3 ribs celery chopped
- 2 medium carrots peeled and chopped
- 10-3/4 ounce can cream of chicken soup
- 32 ounce box chicken broth divided
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried parsley
- 1-1/4 cup 8 ounce bag wild rice, uncooked
Instructions
- In a skillet over medium heat, cook bacon and chopped vegetables for 3-5 minutes, until the color of the vegetables starts to brighten. Spoon vegetable mixture into a 6 quart slow cooker.
- Add turkey and uncooked rice to slow cooker.
- In a bowl, whisk together cream of chicken soup and half of the chicken broth. Add remaining broth and seasonings. Pour over turkey mixture in slow cooker. Stir well.
- Cover and cook on low setting for for 6-7 hours, until rice is tender and liquid is absorbed.

Do you think placing brown rice in the slow cooker would work the same way? I’m not a big fan of wild rice. Thanks! This looks delicious!

Gilly, I haven’t tried it with brown rice, so I can’t say for sure. I think brown rice would work, but you might want to wait to add it until later. If it overcooks, the rice will get pretty soggy. Try 3-4 hours of cooking time with the rice, and adjust from there (at least that’s what I would try). Good luck, and let me know how it turns out!
