I’m almost done with the crockpot recipes. I promise. I have one more to share with you next week, and then I’m moving on. But for now… pork chops with tomato rice!
From this ahh-mazing cookbook from Gooseberry Patch – “Slow Cooking All Year ‘Round.”
Line your crockpot for easy clean up. Then mix together a large can of tomato sauce and a can of stewed tomatoes (include the juice from the stewed tomatoes).
Add in 1-1/2 cup uncooked rice. (I recommend using either converted rice or brown rice. I used white rice and it ended up a bit mushy.)
Top it off with 1-3/4 cups water.
Sprinkle 4 pork chops with salt and pepper and add them to the crockpot.
Press the pork chops down so they are covered in the tomatoey-goodness. (If you need a little more liquid, add more water.)
Cover and cook on low for 6-8 hours. If the top starts to dry out a little, add more water during cooking.
