Do you know what throws a wrench into meal planning and healthy eating? Travel. Travel to a conference, staying in a hotel with your whole family. That screws up any kind of meal planning, grocery shopping, and sometimes it makes it hard to even get a vegetable in there. That’s what we are dealing with in March! For whatever reason, March is conference month for us. We are traveling as a family, and John and I are both traveling solo some this month.
When we are home, these meal plans are going to be a life saver! No one has to worry about what’s for dinner, we just pull out the menu and fire up the stove. This is one way that I am going to keep my sanity in March!

I decided that I needed to start my week with dessert and figured you would not have any objections, especially once you check out Coconut Cherry Bars. There’s a piece of heaven in each bite.

My Fearless Kitchen is baking Oven Fried Chicken that looks incredible. Marybeth is offering all the crunchy crust of fried chicken without the extra fat!
Nothing like a trip to Rome for a bit of inspiration. Raquel’s trip turned into our win with Organized Island’s Sausage Mozzarella Pizza.
I love comfort food that is easy to put together and loaded with flavor. Kimmi’s Dairyland’s Parmesan Chicken Fettuccine is a perfect example of a meal we will all love.
