Seriously. I think Farmer Doc is starting to get tired of my crockpot cooking. But I love it! Especially on those days when I just don’t have the energy to stand in the kitchen to make dinner… that slow cooker sure comes in handy!
Because I just can’t get enough… another recipe from “Slow Cooking All Year ‘Round” by Gooseberry Patch. You know you love it, too!
You will need to get one small bowl dirty to make this dish, but that’s it! Everything else is just layered in your slow cooker! (I seriously love meals that come together so easily, and in just 1 or 2 dishes!)
Make up a super-simple sauce with 1 can of cream of chicken soup and 1 cup of milk. Whisk all that together, and then pour just a little bit in the bottom of your slow cooker. You’ll pour the rest over the top of the chicken in just a minute, so be a tiny bit stingy with this layer. You want plenty of this sauce on top of your chicken, and any extra will just run down to the bottom of the slow cooker, anyway.
Serve this chicken right out of the slow cooker on top of some cooked brown rice out of the freezer… with that sauce drizzled all over the rice… yum! (And please serve yours with some kind of veggie. Everyone needs to eat their veggies!)

Crockpot Chicken Cordon Bleu
Ingredients
- 1 can cream of chicken soup
- 1 cup milk
- 4-6 boneless skinless chicken breasts
- 1/4 pound sliced deli ham
- 1/4 pound sliced Swiss cheese
Instructions
- In a small bowl, whisk together soup and milk. Pour just enough into a slow cooker to cover the bottom.
- Arrange chicken in the slow cooker on top of the soup.
- Cover chicken with ham slices, then add the cheese slices. Pour the rest of the soup mixture over the chicken.
- Cover and cook on low for 4-6 hours (or on high for 2-3 hours).
