Crockpot Chicken Cordon Bleu

By Marybeth Feutz 1 Comment

Seriously. I think Farmer Doc is starting to get tired of my crockpot cooking. But I love it! Especially on those days when I just don’t have the energy to stand in the kitchen to make dinner… that slow cooker sure comes in handy!

This Chicken Cordon Bleu needs just a little bit of prep, then cooks all day in your slow cooker while you're off doing other things!

Because I just can’t get enough… another recipe from “Slow Cooking All Year ‘Round” by Gooseberry Patch. You know you love it, too!

You will need to get one small bowl dirty to make this dish, but that’s it! Everything else is just layered in your slow cooker! (I seriously love meals that come together so easily, and in just 1 or 2 dishes!)

Make up a super-simple sauce with 1 can of cream of chicken soup and 1 cup of milk. Whisk all that together, and then pour just a little bit in the bottom of your slow cooker. You’ll pour the rest over the top of the chicken in just a minute, so be a tiny bit stingy with this layer. You want plenty of this sauce on top of your chicken, and any extra will just run down to the bottom of the slow cooker, anyway.

Make this Chicken Cordon Bleu in your slow cooker, and your family will think you spent all day in the kitchen!

Serve this chicken right out of the slow cooker on top of some cooked brown rice out of the freezer… with that sauce drizzled all over the rice… yum! (And please serve yours with some kind of veggie. Everyone needs to eat their veggies!)

Enjoy!

I am SOOOOO making this meal this week, AND I may even splurge on crock pot liners. AND I may just have to add this cookbook to my growing collection of Gooseberry Patch Cookbooks!
