peeled and cut into 1/2 inch cubes

peeled and chopped

onion
diced

stalks celery
chopped

2-3 cups cooked ham, chopped
1-1/2
teaspoon
garlic salt
1-1/2
teaspoon
salt
1-1/2
teaspoon
pepper
1-2
cups
instant mashed potato flakes
one 4-ounce package of instant mashed potatoes is approximately 1 cup
1/2
cup
butter
sliced
1/2
cup
grated Parmesan cheese
Optional: fresh chopped parsley or chives to garnish
Instructions
In a
large stock pot
, over medium-high heat, combine broth, vegetables, ham, and seasonings.
Bring to a boil.
Reduce heat to medium and simmer until potatoes are tender (about 15-20 minutes), stirring occasionally.
Shortly before serving, stir in remaining ingredients.
Simmer for 10 minutes, until thickened.
Soup will continue to thicken as it is cooked longer, and as it cools.
Top individual portions with desired garnish.
