Instant Pot Ham & Corn Chowder

If you love a thick, hearty soup, you'll love this Instant Pot Ham & Corn Chowder! Cooking soup in an electric pressure cooker makes it taste like you slaved over the stove all day, even though it took about an hour to make!

Ingredients

chopped onion

all-purpose flour

chicken broth

cans sweet corn

cubed ham
2
cups
cubed potatoes

half-and-half
Instructions
Turn your
Instant Pot
on to "saute." Add the butter and let it melt.
Once the butter is melted, add the onion. Cook the onion, stirring frequently with a
nylon
or
wooden
spoon, until it turns translucent (3-5 minutes).
Add the flour, and quickly
whisk
to form a thick paste.
Pour the chicken broth into the Instant Pot, and whisk to combine.
Add the corn (undrained), ham, and potatoes.
Cover and lock the Instant Pot.
Press "cancel," then press "soup." Set for normal time on high pressure.
When the Instant Pot is done cooking, let it slowly release pressure for 5 minutes, then quick-release the rest of the pressure.
When you can safely remove the lid of the Instant Pot, open it and add the half-and-half. Stir to combine.
Cover the Instant Pot (do not lock), and keep it on the "keep warm" setting until the half-and-half is heated through.
Serve immediately.
