Taco Cheeseburger Cups

Tacos and cheeseburgers all in one? Make these Taco Cheeseburger Cups for Taco Tuesday or for your regular burger night. Who can refuse a cheeseburger taco?

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can Pillsbury Grands buttermilk biscuits with flaky layers
  • 1-1/2 cups shredded fiesta-blend cheese

Instructions
 

  • In a large skillet, brown ground beef. Crumble to desired texture with a mix-n-chop. Drain if needed.
  • Add taco seasoning packet to ground beef. Stir well and let cook for 1-2 minutes.
  • Add water to ground beef. Stir well. Let simmer for 4-6 minutes, until most of the liquid is absorbed.
  • Lightly spray a muffin tin with cooking spray.
  • Open biscuits. One at a time, lightly flatten each biscuit between your hands and press it into a muffin cup.
  • When the taco meat is ready, evenly spoon the meat into the biscuit cups.
  • Using 1 cup of the shredded cheese, top each taco cup with cheese.
  • Place the muffin pan on a lipped baking sheet. (The sauce from the taco meat may spill over the muffin cups while they are baking. Line the baking sheet with aluminum foil for easy cleanup.)
  • Bake at 400 degrees for 15 minutes, until biscuits are golden brown.
  • Let cool slightly before removing muffin cups from the pan.
  • Top with the rest of the cheese and serve immediately.
