Ingredients

half-and-half

cup
shredded Cheddar cheese

cup
cooked ham
finely chopped
1
green pepper
finely chopped
1/2
onion
finely
chopped
Instructions
In a
large bowl
, whisk together eggs and half-and-half.
Mix in ham, pepper, and onion. Fold in shredded cheese.
Spray cups in a
muffin pan
with non-stick spray. Pour egg mixture evenly into muffin cups (will fill 10-12 cups).
Bake at 400 degrees for 20-25 minutes, until eggs are set.
Let cool in tins for 5 minutes, then turn out and enjoy.
