Slow-Cooker Pineapple Chicken
From "Slow-Cooker Fall Favorites" by Gooseberry Patch.
- 1 onion chopped
- 3-4 boneless skinless chicken breasts or thighs
- 20- ounce can pineapple rings
- 2 Tablespoons soy sauce
- 1/2 cup chicken broth
- cooked rice
Place onion in a slow cooker; top onion with chicken.
Add pineapple with juice to slow cooker; add soy sauce and chicken broth.
Cover and cook on low for 6-8 hours, until chicken is done (165 degrees in the center).
Serve chicken, pineapple, and juices over rice.
